Eleni Kasapidou is an Associate Professor at the Department of Agriculture, University of Western Macedonia (Florina, Greece), working on meat and dairy quality, food safety, and the characterization of foods of animal origin. She holds an MSc and PhD from the University of Bristol (UK) supported by Marie Curie funding, and completed postdoctoral research at the University of Maastricht (The Netherlands) in an industry-linked setting on novel and functional foods. Her research spans experimental and applied studies, including sustainable approaches such as innovative ingredients and agri-food by-product valorization, alongside teaching and supervision at undergraduate and postgraduate level.
